2016 Sauvignon Blanc
25.2 Brix at Harvest
15% New French Oak, 15% Stainless Steel, 18% Concrete Egg, 52% Neutral Oak
A beautiful Sauvignon Blanc, from first look to finish. More yellow than most, this one hints at its time on new French oak. The wine opens up with a subtle bouquet of piña colada and Sunbum sunscreen. Below the coconut goodness, bright fruit reels you in! Aromas of lychee, pineapple, kiwi and lime zest swirl in the glass. On the palate, this wine is rich and round, but balanced by an underlying acid sizzle. Tropical fruit flavors with a slight vanillin finish. This balanced and elegant wine will drink beautifully by itself, but would pair great with anything from baked salmon to coconut crusted shrimp.

This is by far the most unique Sauvignon Blanc I've ever tasted. It's such a dynamic wine; I think largely in part to the aging in cement, oak and stainless steel.
